    Red Chile with Pork

    Red Chile with Pork

    Ingredients:

    2-3/4 to 1" thick boneless pork chops
    Extra virgin olive oil (use vegetable or canola if you prefer)
    3 tbsp. flour
    1/2 - 1 tsp salt (add carefully and sneak up on the right amount, nothing ruins it faster than too much)
    1/8 tsp cumin seed
    1/4 tsp dried oregano
    black pepper to taste
    2 cloves garlic, sliced
    1/4 cup chicken broth
    2 cups water
    2 tbsp. this:

    You can substitute 4 tbsp. chile powder of your choice.

    Instructions:

    Let chops come to room temperature 30 min.
    Lightly salt/pepper chops, in medium pot brown slightly both sides in 1 tsp. oil with medium heat. Add chicken broth, cover and cook with low heat until chops just reach 140F. Don't overcook! Remove from pot, let cool and cut into small cubes, removing any fat you don't want. Save any juice from pot and chops after you remove them to add to sauce, don't forget this it adds a lot of flavor.

    In same pot w/ pork fond bloom garlic in 2 tbsp. oil medium heat like 30 sec-1min, add flour and brown flour for about 1 min. or so.
    Add chile powder off heat and mix it in a bit if you can. Slowly add water, breaking up any lumps. Return to med. heat add salt pepper cumin and oregano.
    Stirring often, - don't let lumps form or let it stick at bottom - bring to simmer, tasting and adding more salt/spices as desired.
    Add pork/juices, bring to simmer again and barely simmer with low heat 5-10 min, stirring often. Add a little water or broth if sauce is too thick.

    Makes about 3 cups of rockin' goodness.

    I made a quadruple batch of this and gave away most of it + posole, my friends all love me now.
